Simple Recipes For Using Your Chimichurri Sauce

Fresh and herbal chimichurri is so delicious and incredibly versatile. Even if you already have some favorite chimichurri dishes, you could definitely benefit from some new and exciting suggestions for using this sauce in fun ways. To that end, here are three simple recipes that use your chimichurri to its greatest potential.

Chicken and Mango Paninis 

Chimichurri and mango pair together really well. The herbal quality of the chimichurri is a nice contrast to the sweetness of the mango. To make one chicken and mango panini, you need:

  • 2 slices ciabatta or Italian bread
  • 2 ounces of sliced, cooked chicken breast
  • 2 thin slices of mangos
  • 5 - 6 arugula leaves
  • 2 tablespoons chimichurri
  • olive oil

Brush the bread with olive oil on one side. Place the first slice in a pan with the olive oil-coated side down. Layer on the chicken, mango, and arugula. Spread the other slice of bread with the chimichurri (place the chimichurri on the opposite side to the olive oil.) Top the sandwich with the second slice of bread; make sure the olive oil faces out. Cook the sandwich until light brown on the first side. Flip it, and cook until the second side is also light brown.

Chimichurri Roasted Cauliflower

Cauliflower has a really light, neutral flavor, so this dish really lets the chimichurri shine through. All you need is:

  • 1 head of cauliflower, cut into small chunks
  • 2 tablespoons olive oil
  • 1/2 cup chimichurri
  • 1/2 teaspoon kosher salt

Place the cauliflower in a bowl. Add the other ingredients, and stir them up well to ensure the cauliflower is well-coated. Spread the cauliflower out on a baking sheet. Roast at 375 degrees F for 30 minutes, stirring once halfway through cooking.

Chimichurri and Chicken Nachos

These nachos are a fresh take on the classic! You need:

  • 4 ounces corn tortilla chips
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded, seasoned chicken
  • 1/4 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup salsa
  • 1/4 chip chimichurri
  • 1 avocado, sliced

Spread the chips out on a plate. Layer on the remaining ingredients, except for the avocado. Place in a 350-degree oven for 5 - 10 minutes or until the cheese is melted. Top with the avocado, and enjoy.
